Mmmm.....leeks. I kind of forgot how good leeks are. I bought a bunch and made two yummy meals with them. First, I made baked penne with cheese and leeks. It was a super rich dish. If you want a lighter version, just use less cheese and butter. I also didn't add any eggs, because I don't like my cheesy pasta to be like scrambled eggs. With the leftover leeks I made a hearty potato leek soup using the recipe from Pinch My Salt. It was thick, creamy, tasty and perfect for our blustery Wednesday yesterday. Buon appetito!
